One Pot Pasta

One Pot Pasta: Tomato and Basil Spaghetti Serves 3-4 Ingredients

8 oz spaghetti, uncooked, rinsed in cold water to remove excess starch 1 3/4 cups water 1/4 cup white wine 1/3 cup apple cider vinegar 1 tsp salt 1/4 tsp pepper pinch of crushed red pepper (or more if you like it spicy) 1 cup chopped artichoke hearts 2 cups chopped tomatoes 3 cloves garlic, grated 1/4 red onion, sliced 1/4 Vidalia onion, sliced 1/4 cup pitted kalamata olives 1/4 cup fresh basil, chopped (plus more for garnish) Parmesan cheese for garnish

Directions Combine all ingredients except extra basil and Parmesan cheese in a deep sided saucepan or skillet. Bring to a boil and cook for 10 minutes, uncovered, stirring occasionally. After 10 minutes, check pasta. If it is too al dente, add 1/4 cup of water or wine and cook for an additional 3-5 minutes, stirring occasionally. Serve hot with extra chopped basil and freshly grated Parmesan cheese.

Best Scrambled Eggs Ever


Ingredients:
Servings: 2
2 teaspoons butter (or to taste, can omit and use vegetable spray, the butter is better)
4 large eggs
2 tablespoons milk (low fat milk is okay to use)
1/8 teaspoon baking powder (don't be shy to add in even 1/4 teaspoon)
1/4-1/2 teaspoon salt (or to taste)
fresh coarse ground black pepper
1/2 cup grated low-fat cheddar cheese (optional)

Directions:
1 In a bowl whisk the eggs vigorously with milk, baking powder, salt and black pepper until very well combined; let stand at room temperature for 5-7 minutes.
2 Heat butter until sizzling over medium-high heat in a large skillet (or spray the skillet with vegetable spray).
3 Whisk eggs again briefly then mix in the cheese (if using).
4 Pour into the hot skillet, stirring constantly with a small heat-proof spatula until they have reached desired consistency (DO not overcook the eggs, they will cook more when removed to a plate!).

Banana Nut Bread

Ingredients:
Serves: 24
Yield: 2 loaves

2 cups sugar
1/2 teaspoon salt
2 1/4 cups flour
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla
1 1/3 teaspoons baking soda
1/4 cup buttermilk (I've always used sour milk)
1 cup chopped pecans
4 -5 bananas (use completely black bananas, this is very important)

Directions:

1 Heat oven to 350°. Grease or spray 2 loaf pans.
2 In a large bowl, mash bananas with a masher or by well washed hands.
3 Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.
4 Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
5 Totally clean will mean a dryer loaf.
6 Let cool 15 minutes after removing from oven and remove from pans.
7 Or, let cool, cover with foil, slide into freezer bags and freeze.
8 Great when using tin foil pans.

Ingredients:
Servings: 3
1 lb ground pork
1 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 teaspoons sage
1 3/4 teaspoons thyme leaves
3/4 teaspoon savory
1 teaspoon fennel
1/4 teaspoon dried mustard
1/8 teaspoon clove
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne

Directions:
1 Put all the spices in a small bowl and mix them up with your fingers.
2 Work it into the pork after sprinkling it all over the meat. Try not to mash it around too much, otherwise the sausage will be too tight.

Ingredients:
Servings:16
1 lb sausage (I use Jimmy Dean)
24 ounces frozen hash browns, with onion and peppers
6 eggs
2 cups milk
1 teaspoon ground mustard
1 teaspoon salt
1/2 tsp.black pepper
1 dash hot sauce (optional)
8 ounces cheddar cheese, shredded (more for the topping if desired)

Directions:

1 Set oven to 350°F.
2 Brown the sausage, drain. I like to put it in a food processor and hit pulse a few times, I don't like the larger pieces but don't go so far as to make a paste!
3 Whisk the eggs and seasonings in a bowl,.
4 add milk.
5 Spray a 9x13" pan with cooking spray.
6 Layer the ingredients as follows; all the sausage, then a layer of cheese, then half the bag of hash browns, then the cheese and the rest of the hash browns. Pour the egg/milk/ seasonings mixture over all.
7 Cover with foil bake for one hour, check for doneness, mine usually take a bit longer, but everyone's oven is different.
8 When done top with more shredded cheese and let rest for 10 minutes.
9 Serve with fruit salad for a delightful brunch!

Ingredients:
Servings:6
2 tablespoons butter, divided (or use Pam cooking spray)
1 (14 ounce) can water-packed artichoke hearts
1/2 cup asiago cheese, grated
1/2 cup gouda cheese, grated
1 tablespoon olive oil
1 large shallot, thinly sliced
1/2 cup milk
6 eggs, lightly beaten

Directions:
1 Preheat the oven to 350 degrees F.
2 Grease a 1 quart shallow casserole pan or quiche pan with 1 tablespoon of the butter (or use the cooking spray).
3 Drain and quarter artichokes and place in the prepared pan.
4 Cover artichokes with the grated cheeses.
5 In small pan, sauté shallots with a tablespoon of the butter until the shallots become tender, about 5 minutes over medium heat.
6 In medium bowl, beat milk and eggs together with a fork. Add in the sautéed shallots and stir to combine.
7 Pour milk, egg, and shallot mixture over the artichokes and cheeses.
8 Bake in 350 degree F oven for 30 minutes, or until set.

Ingredients:
Servings: 6-8
2 tablespoons honey mustard
1 tablespoon Dijon mustard
2 tablespoons red onions, finely chopped
1 1/2 tablespoons capers, drained
2 teaspoons fresh dill, minced
12 slices baguette
4 ounces goat cheese
3 ounces smoked salmon, thinly sliced
olive oil

Directions:
1 Preheat oven to 350 degrees.
2 Blend honey and dijon mustards, red onion, capers and dill.
3 Arrange bread on baking sheet and lightly brush with olive oil.
4 Bake until crisp, about 10 minutes. Cool.
5 Spread croutons with goat cheese, then mustard mixture. Top with smoked salmon.

Ingredients
2 packages crescent rolls
1 package Jimmy Dean cooked sausage crumbles
1 envelope country gravy mix
6 eggs
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
8 oz shredded cheddar cheese
4 oz shredded pepper Jack cheese

Directions
1. Heat oven to 375. Separate crescent dough into 16 triangles and place on a greased, round pizza pan with points toward the center. Press onto the bottom and up the sides of pan to form a crust; seal seams. Bake for 11-13 minutes or until golden brown.
2. Meanwhile, prepare gravy according to package directions in a medium saucepan. Stir sausage crumbles into thickened gravy; set aside.
3. In a small bowl, whisk together the eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set.
4. Spread sausage gravy mixture over the crust. Top with eggs and cheeses. Bake 5-10 minutes longer or until eggs are set and cheese is melted. Cut into wedges.

6 medium onions
2 large green bell peppers
1 large cabbage
1 medium celery bunch
1 or 2 large cans whole tomatoes, or fresh
1 pouch dry onion soup mix
herb seasonings (optional)

1 TO MAKE THE SOUP: Cut veggies in medium pieces, add soup mix, herb seasonings and boil, covered with water, for 10 minutes. Turn on low heat & simmer until veggies are soft. Refrigerate leftovers.

crock pot style.

When ever I make a ham I always take the butt end of it.. and start some Lima beans or Black Eye Peas.
I hope you enjoy this easy.. protein packed recipe.

Ingredients:
one bag of uncooked Black Eye Peas.
one large WHITE onion
Ham or Pork Hocks
one and a half cups of distilled water
one fresh sprig of thyme
two bay leaves
one teaspoon Mrs. Dash original seasoning
one teaspoon onion powder
two large heaping Tablespoons of jarred chopped garlic
two teaspoons of fresh cracked pepper
two teaspoons seasoning salt by lawreys. ( I actually use this stuff called BUCKS seasoning my father in law sends me from Upstate new york.) but seasoning salt is second best.
DIRECTIONS:
Add all the ingredients in a large pot and bring to a boil after washing black eye peas in colander and draining.
when boiling reduce to med simmer for 15 min.
Transfer all the ingredients to a crock pot and allow to cook at least four to five hours on high. then reduce to low for another hour or so.

Serve over fresh warm corn bread or bread on the side. your choice. we like it right on top of the corn bread fresh from the oven.

Homemade Dishwasher Detergent Tabs
Ingredients:...
2 cups Washing soda or Baking soda (cuts grease, great all-purpose cleaner)
2 cups Borax (natural cleaner and disinfectant)
1/2 cup Kosher salt or Epsom salt (reduces the effects of hard water)
1/2 cup vinegar (added cleaning power, liquid to help bind the ingredients)
15-20 drops of real lemon really cuts the scum and cleans well

Directions:
!.Mix all the ingredients together with a spoon. (The addition of the vinegar will cause a little fizzing, but not much.)
2. Once all the ingredients are well combined you will notice it actually will start clumping all by itself.
3. Transfer the mixture into two ice cube trays and press down until each ice cube compartment is hard packed with detergent. If you packed them all down really well, you should use all of the mixture in those two trays.
4.Now the hardest part for me….waiting. These babies need to DRY good and hard before you use them. Put them in a dry, sunny spot (preferably one you won’t see so you won’t be tempted to touch them before they’re good and dry) and let them sit for at least 24 hours.
5.When they are good and hard and DRY, unmold them from the trays and store in a container with a tight-fitting lid.
How to use
Add 1 tablet to your dishwasher detergent compartment.
I don't have hard water and the dishes came out clean if you have hard water add a 1/4 cup of vinegar to the rinse.

Bacon Onion Foil Packet Potatoes

Ingredients:
3-4 sheets heavy duty foil
1 packet Lipton onion soup mix
10-12 baby red potatoes, thinly sliced
12 slices cooked, crumbled bacon
1 cup shredded cheese
Salt/Pepper to taste
3-4 tbsp butter
Sour Cream (for topping)

Directions:

Spray each sheet of foil with cooking spray. Top each piece of foil with an even amount of potatoes, bacon, and Lipton onion soup mix. Mix to coat evenly. Add salt/pepper to taste. Add 1 tbsp of butter to each packet. Wrap securely and place on grill. Grill for about 20-30 minutes. If you bake these, bake at 350 for about 35 minutes. Once cooked, remove from heat and open packets carefully. Place some sour cream on top and serve!

Easy Beef & Noodles

Easy Beef & Noodles

Ingredients
1 3 Lb Chuck Roast
1 Large Can Cream of Mushroom Soup
2 Cups Beef Broth
1 Large White Onion Chopped
Salt & Pepper.
Ground Garlic & Parsley- Mix to taste
1 Bag Egg Noodles

Instructions
Generously add Salt, Pepper and Garlic to the roast then give it a quick sear on all 4 sides. Place Beef Broth, Cream of Mushroom Soup and Onion on top of the roast. Place in crock pot and cook on high for 5 hours or low for 7 hours.
Cook one bag of egg noodles to desired doneness. While those are cooking, take the roast out of the crock pot and shred then add back to the pot with the gravy that has formed.
Place noodles in a bowl, pour beef and gravy over noodles and mix
Perfect Beef and Noodles every time and super quick on a busy evening!

Crispy Baked Garlic Shrimp

Crispy Baked Garlic Shrimp
1 lb. raw shrimp, deveined and peeled
4 cloves garlic, minced
2 Tbsp. white wine
salt and pepper
1/4 cup (4 Tbsp.) melted butter
1/2 cup Panko bread crumbs
2 Tbsp. fresh Italian-leaf parsley, chopped
half of a lemon (optional)
Directions
In a bowl, combine the shrimp, garlic, and white wine. Stir to combine, then pour into a baking dish. Spread out evenly, and then season with salt and pepper.
In another bowl, use a fork to mix melted butter, Panko, and parsley until well combined. With your fingers, sprinkle the mixture evenly in the baking dish over the shrimp.
Transfer dish to oven and bake at 425 until the shrimp are pink and opaque, about 15-18 minutes.

Fully Loaded Baked Potato Salad

Fully Loaded Baked Potato Salad
8 medium Russet Potatoes
1 cup sour cream
1/2 cup mayonnaise
1 package of bacon, cooked and crumbled
1 small onion, chopped
Chives, to taste
1 1/2 cups shredded cheddar cheese
Salt and Pepper to taste

1. Wash and cut the potatoes into bite-sized pieces. Cover with water and boil until fork tender, about 20-25 minutes. Do not overcook!
2. Drain and cool the potatoes. I put them in a separate bowl and once they cooled enough I put them in the fridge to cool all the way. This gave them an excellent texture and prevented the dairy ingredients from getting hot or the cheese from melting. If you are serving this salad hot then you don’t need to cool the potatoes, just skip step 2!
3. Mix the mayo and sour cream together in a bowl. Add to the potatoes, then add the onions, chives, and cheese. Salt and pepper to taste – I use a pepper grinder and a sea salt grinder for EVERYTHING so I never know exactly how much of either I put in. I think the taste is far superior to just using regular table salt and pepper.
4. Top with extra shredded cheese and bacon and serve!

INGREDIENTS:
1/2 c salted butter, softened
3/4 c dark brown sugar
1/2 c white sugar
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla extract
2 eggs
1 pkg ( 10 oz) Andes Creme de Menthe baking chips
2 2/3 c all purpose flour

INSTRUCTIONS:
Beat butter, sugar, baking soda, baking powder, vanilla and eggs until mixed. Stir in chips, then flour.
Chill one hour in refrigerator. form ball and slightly flatten.
Bake 350 degrees for 8-10 min.
Cool on pans for two min before removing.
Makes about 4 doz

Ingredients
1 head cabbage chopped into strips about 2"x1" wide
2 medium onions coarsely chopped
1 1/2 cup real butter, may need more
1 package cooked medium egg noodles
salt and pepper to taste

directions
Saute the chopped onions in a very large skillet using 1 cup of the butter.

These photos have been taken almost exactly a year apart! This is close to 60lbs lost! Its been a slow journey but well worth it. I started this journey not taking it seriously, I was skeptical and did not believe that this product would really work.
