Scalloped Corn!! WOW this DEF looks DELICIOUS!!
Ingredients->>
15.25 oz. can whole kernel corn, drained (I used white)
14.75 oz. can cream style corn (again, I used white)
2 green onions, chopped
2 eggs, beaten
20 Ritz Crackers, crushed (I used the new bacon flavored)
2 T. butter, melted
1 C. shredded sharp cheddar cheese
1/2 tsp. salt
1/2 tsp. pepper
1/4 C. French fried onions, crushed (for topping)
Ingredients->>

In a bowl, combine both cans of corn, the onions and the beaten eggs. Stir in the crackers, butter, cheese, salt and pepper. Pour into a lightly greased 9x13 baking dish. If this story doesn't make you cry for laughing so hard, let me know and I’ll pray for you. This is a story about a couple who had been happily married for years, the only friction in their marriage was the husband’s habit of farting loudly every morning when he awoke the noise would wake his wife and the smell would make her eyes water and make her gasp for air.
-- Every morning
she would plead with him to stop ripping them off because it was making her sick. He told her he couldn't stop it and that it was perfectly natural. She told him to see a doctor, she was concerned that one day he would blow his guts out. The years went by and he continued to rip them out. Then one Christmas day morning, as she was preparing the turkey for dinner and he was upstairs sound asleep, she looked at the innards, neck, gizzard, liver and all the spare parts, and a malicious thought came to her. She took the bowl and went upstairs where her husband was sound asleep and, gently pulling the bed covers back, she pulled back the elastic waistband of his underpants and emptied the bowl of turkey guts into his shorts. Sometime later she heard her husband waken with his usual trumpeting which was followed by a blood curdling scream and the sound of frantic footsteps as he ran into the bath room. The wife could hardly control herself as she rolled on the floor laughing, tears in her eyes! After years of torture she reckoned she had got him back pretty good. About twenty minutes later, her husband came downstairs in his blood stained underpants with a look of horror on his face. She bit her lip as she asked him what was the matter. He said, “Honey you were right… all these years you have warned me and I didn't listen to you.” “What do you mean?” asked his wife. “Well, you always told me that one day I would end up farting my guts out, and today it finally happened, but by the grace of god, some Vaseline and two fingers. Strawberry Pretzel Salad
Ingredients->>
2 2/3 cups crisp pretzels, nearly pulverized
1 1/4 cups sugar or 1 1/4 cups Splenda sugar substitute
1/2 cup butter, melted
8 ounces cream cheese, softened
8 ounces Cool Whip
2 cups boiling water
1 (6 ounce) strawberry Jell-O gelatin dessert
1 lb fresh strawberries, sliced
Ingredients->>

2 cups boiling water
1 (6 ounce) strawberry Jell-O gelatin dessert
1 lb fresh strawberries, sliced
Directions->>

2 Spread into a 9x13-inch glass pan and bake for 10 minutes. Cool thoroughly.
3 Whip soften cream cheese with Cool Whip. Add in 1 cup of sugar or splenda and whip thoroughly. Spread on top of pretzels. (It is important to make an "air tight" seal over the pretzels with the cream cheese mixture. Make sure it goes all the way to the sides of the glass pan.).

5 While salad is chilling, add boiling water to Jell-O and stir. Let sit until at room temperature and then pour GENTLY over cream cheese/strawberry layer. Stick salad into fridge (covered) until Jell-O is firm.

Mandarin Orange and Cranberry Muffin Bread
2 C. self rising flour
1/2 C. sugar
2 T. butter, melted
1 egg, beaten
1 1/4 C. milk
1/2 tsp. vanilla extract
1 C. fresh whole cranberries
11 oz. can mandarin oranges, drained
Mandarin Orange and Cranberry Muffin Bread

1 C. fresh whole cranberries
11 oz. can mandarin oranges, drained
Whisk together the flour and sugar. Add in the melted butter, egg, milk
and vanilla extract. Stir well to combine then fold in the cranberries
and mandarin oranges. Butter a loaf pan very well and pour the mixture
into the pan and spread around to even out. Bake at 375 degrees for
35-40 minutes or until a skewer stick comes out clean. Remove from the
pan to a cooling rack.

Crockpot Candy ~ To keep from eating it all, give as gifts!!
Ingredients->>
32 oz dry roasted peanuts (I think I'm going to try almonds!)
12 oz semi sweet chocolate chips
4 oz German sweet chocolate bar (found in baking isle with chocolate chips)

2 pears
3 apples (I used golden delicious)
1/4 C. apple juice
1 T. brown sugar
1 1/4 C. white sugar
1 tsp. cornstarch
1/2 tsp. cinnamon
1 stick of butter
1 C. self rising flour
1 tsp. baking powder
1 C. whole milk

Peel and chop up the pears and apples into bite size pieces. Place the
fruit in a med. size pot over med. high heat. Add in the apple juice,
brown sugar, 1/4 C. white sugar, cornstarch and cinnamon. Stir to
combine and bring to a boil. Reduce the heat to medium and continue
cooking until it begins to thicken (6-8 minutes). Remove from heat, set
aside. Place the stick of butter in a 9x9 baking dish and put in the
oven as it is preheating to 350 degrees. Meanwhile, whisk together the
flour, remaining sugar, baking powder and milk. Once the butter has
melted, remove the baking dish and pour in the batter all over the pan.
Top the batter with dollops of the fruit mixture all over. DO NOT STIR.
Return to the oven and bake for 20-25 minutes or until golden brown.

The further I make it in my journey, I am noticing the process seems to be a little slower, but I am perfectly ok with that! I don't like to talk about my weight because lets be real for a minute, it's embarrassing to admit that you have eaten your way to being so unhealthy that you hate looking in the mirror. I am finally ready to admit it. I have not told anyone this so let me just break it to the whole world! I was OVER 200 pounds when I started this journey! At a short person (or concentrated awesomeness as my friends put it) of only 5'1, being over 200# was going to kill me eventually. The first picture is when I started. I believe I took it August of last year some time? I am not positive. I sported oversized pajama pants (size 18-20 were tight but that what I wore) to hide my stomach and a tank top that was too tight (all my shirts were too small at size xl-xxl). The middle photo was taken in April earlier this year, I **think** I was down about 30 lbs in that photo. I can't be positive but that pants were a size 16 and the swimsuit top was still an XL. The last photo was on Saturday (11/22/14) My pants are a size 12 fitting a little on the loose side and the sweater is a small large (more like a medium I would say!) and I am officially down just over 55 pounds! I never thought I would ever make it this far. My new year's resolution was to be healthier, and while I tried not to set a number goal, I think we all do when we are this overweight. I secretly set my goal for 35 pounds. I WAY surpassed that goal! The year isn't even over yet! 1 large onion, chopped
1 stalk celery, chopped
2 large carrots, peeled and sliced
2 cloves garlic, minced
3 T. butter
1 C. water
3 C. chicken stock
2, 15.5 oz. can dark red kidney beans, drained
1, 15.5 oz. can light red kidney beans, drained
1, 15.5 oz. can white kidney beans, drained
3-4 C. cubed ham (use more or less, depending on your preference)
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. parsley
1 bay leaf
1 large onion, chopped

ham and seasonings. Reduce the heat to low, cover and cook for 1 hour.
Remove the bay leaf before serving.

This is ME.. Cher, this is when I first started using Skinny Fiber. A couple months after my chemo for Breast Cancer. Italian Sub Sandwich
Italian Sub Sandwich
Homemade Pizza Dough
Serves 6
A homemade pizza dough that I promise you can make.
Prep Time 3 hr Cook Time 20 min Total Time 4 hr
Ingredients
5 cups all purpose flour
2 packages active dry yeast
2 tbsp sugar
2 tbsp olive oil, divided
2 tsp salt
2 cups water, warm
Instructions
In a stand mixer with the hook attachment pour in the warm water, yeast, sugar & 1 tbsp. olive oil.
Allow to sit until the yeast begins to foam (about 5 minutes)
Add flour & salt and mix until the dough is smooth and pulls away from the side of the bowl.
Drizzle half of the remaining olive oil over the top of the dough
Turn the dough over in the mixing bowl and cover with a clean tea towel and allow to rise to approximately twice it's size (about a hour) - I placed mine in my laundry room where the dryer was running
Punch the dough down and roll out onto a lightly floured surface.
Knead for 3-4 minutes
Place back into a bowl and drizzle with remaining olive oil
Turn over in bowl
Cover again and allow to rise a second time.
After another hour or so, punch down again and now it is ready to use.
You can either roll out your dough now or separate into 3-4 balls and wrap in plastic wrap and keep in the refrigerator to use later or freeze.
* We made 4 thin-crust pizzas yielding 36 slices
--To make pizza--
Preheat oven and pizza stone or cookie sheet to 500
Remove stone or cookie sheet and sprinkle a little corn meal over the pan and place rolled out dough on pan
Assemble pizza
Bake for 12-15 minutes until crust is browned and cheese is bubbly

The best way to lose weight is to nourish your body. It might sound counter-intuitive when compared to all of these plans that restrict you, but you will find that when you eat good food, real food, with real nutrients, a reset occurs. It doesn't happen on day one, or even necessarily on day 5 or 6. But one day you will wake up and realize you just aren't that hungry. You will not crave a bag of Cheetos. You won’t want to consume stuff that makes you feel like crap afterwards.
Many people will lose weight simply by switching from a typical North American diet to a whole foods diet. Your body will naturally settle into a comfort zone as it becomes accustomed to receiving actual nourishment. At some point, many find it necessary to get a little bit more strict in order to continue losing weight. At that point, tracking your caloric intake and balancing your calories in/calories out should help the weight loss continue.
Not only did our ancestors eat things that their bodies recognized as food, but they also had to provide the food for themselves. They couldn't just run to the grocery store and load up a cart. They farmed, they hunted, and they preserved. Therefore, they got a lot more exercise than most of us do today, and that also helped keep their weight under control.
The obesity epidemic in America is not, as First Lady Michelle Obama would like to convince us, because of our inability to decipher nutrition labels. It is because of our lifestyles. We have it too easy, grabbing a store-bought package and microwaving it and calling it dinner. Furthermore, our food isn't food and our bodies are crying out for nutrients, leading us to eat more and more empty calories in a desire to satiate our need for nourishment.
Unlike the commercial weight loss industry, I’m not selling you anything. If you quit buying Diet Coke and Lean Cuisine meals and switch to organic veggies and lean meat, I won’t make a dime. But I hope that what I’m saying empowers you to take your health into your own hands.
Skinny Fiber has reduced my cravings of junk food to almost ZERO..
