PIZZA CHICKEN ---- Low Carb

PIZZA CHICKEN ---- Low Carb
1 boneless chicken breast, pounded flat if thick
Salt, pepper, garlic powder and Italian seasoning, to taste
1 tablespoon pizza sauce
4 slices pepperoni...
1 teaspoon butter or oil
2 fresh mushrooms, sliced
2 thin green pepper rings
1 ounce mozzarella cheese, shredded
Season the chicken with salt and other seasonings; grill. Meanwhile, sauté the mushrooms and pepper rings in butter or oil until slightly tender, but not mushy; set aside. Spread the sauce over the chicken, then top with the pepperoni, the pepper rings, mushrooms and then finally, the cheese. Sprinkle with a little additional Italian seasoning, if desired. Bake at 350º about 10-15 minutes or until hot and the cheese is melted. Serve at once.
Makes 1 serving
Can be frozen but the peppers will get soft

Homemade Bacon Cheesy Burgers

Homemade Bacon Cheesy Burgers
Makes 14- 1 inch thick burgers
3 lbs hamburger
2 eggs
14 slices of cooked bacon cut into bite size pieces
2 cups of shredded cheese
2 tbsp pepper
3 tbsp garlic plus
2 tsp Worcestershire sauce
Mix all ingredients in a big bow l till mixed well. I just work it all with my hands its much easier that way I have a burger press I got from my Mom but you can use your hands too and make the patties, I like mine thick so I made them all 1 inch thick. Place them on a foil lined cook sheet (easier clean up, plus you can use the cook sheet when cooking them) I put 6 on then put a piece of parchment paper then put the other 6 on top and use a small piece for the 2 that were left. Cover with plastic wrap and place in the fridge for about 2 hrs to let all the spices come together.
When ready Fire up the BBQ to med heat (350) BBQ till done flipping only once.

White Spaghetti

White Spaghetti
Ingredients:
1 16 oz Pkg of Spaghetti
1 ¼ Cup of Sour Cream, Mexican Sour cream works better
2 Tbsp of Butter
¼ Cup of Milk
2 Tbsp of chicken bouillon powder
1 tsp of granulated garlic
Salt and Pepper to taste
½ cup of fresh Mexican cheese or Monterrey Jack Cheese
Instructions:
Prepare spaghetti according to directions on package, boil and drain
In a saucepan, melt butter on medium heat and once melted add the spaghetti
Add Sour Cream, milk, chicken bouillon, granulated garlic, pepper and lower heat so it won’t stick
Mix together until it is all incorporated
Taste and add salt if necessary
Add the cheese, mix together and you are done
Variations: you can also add chopped ham or veggies

Hello, Stacie here, just wanted to offer an update on my journey to better health! I am a work in progress, had hit a plateau, but have began to lose again! Twice Baked Potatoes

Twice Baked Potatoes
Ingredients:
8 Potatoes (large baking size)
2 sticks Butter
1 cup Sour Cream
2 cups Cheddar Cheese
1 cup Bacon (fried and crumbled into bits)
1/4 tsp Lawry’s Seasoned Salt
Black Pepper
1 Green Onion

Directions:
Wash, then place 8 naked potatoes on a cookie sheet (the reason you bake them "naked" is so the skin will be nice and firm and strong enough to hold the filling later). Bake in a 400 degree oven for 1 hour, 15 minutes, making sure they’re sufficiently cooked through.
Slice 2 sticks of butter into pats. Place them into a large mixing bowl.
Put bacon bits into the bowl with the butter. Add 1 cup sour cream.
After potatoes finishing baking remove from oven, within a few minutes after you remove the baked potatoes from the oven, you need to begin scraping them out. Potatoes will be hot so make a little cradle with a dish towel, and use it to hold the little hot potatoes.With a sharp serrated knife cut each potato in half lengthwise.
Now, with a large spoon, begin scraping out the insides into the bowl. Keep scraping, being careful not to tear the shell. You should leave just a little bit in there for support, but try to remove most of it. Lay the hollowed out potato shells on a cookie sheet.
Use a potato masher to mash the potatoes with the other ingredients.
Measure 1/4 tsp. Lawry’s Seasoned Salt and add it to the bowl.
Now add about 1 cup of grated cheddar cheese and mix it in well. Add black pepper. Cut the end off of one green onion and slice about 2/3 of it.
Put them into the bowl and mix them in. IMPORTANT: If you plan to freeze the twice baked potatoes, do NOT add green onion.
Scoop out some of the potato filling from bowl and begin filling the shells.
Keep going until the filling’s all gone. You might have a shell or two left over, and that’s okay.
Now top each potato with more grated cheddar cheese and put them in a 350-degree oven for 15 to 20 minutes, or until the potato is warmed through.
Or, you could refrigerate them for up to three days until you wanted to serve, OR you could freeze them in Ziploc bags, just as long as you skipped the green onion step.

Homemade Beef & Noodles

Homemade Beef & Noodles

Ingredients
1 3 Lb Chuck Roast
1 Large Can Cream of Mushroom Soup
2 Cups Beef Broth
1 Large White Onion Chopped
Salt & Pepper.
Ground Garlic & Parsely Mix to taste
1 Bag Egg Noodles

Instructions
Generously add Salt, Pepper and Garlic to the roast then give it a quick sear on all 4 sides. Place Beef Broth, Cream of Mushroom Soup and Onion on top of the roast. Place in crock pot and cook on high for 5 hours or low for 7 hours.
Cook one bag of egg noodles to desired doneness. While those are cooking, take the roast out of the crock pot and shred then add back to the pot with the gravy that has formed.
Place noodles in a bowl, pour beef and gravy over noodles and mix
Perfect Beef and Noodles every time and super quick on a busy evening!

Thought I would put up a face comparison.....what do you all think?

I am down 30 lbs and 24 inches in just over 3 months! I am in my 2nd 90 day challenge. I LOVE my Skinny Fiber! Fried Green Tomatoes

INGREDIENTS:
4 large green tomatoes
2 eggs
1/2 cup milk
1 cup all-purpose flour
1/2 cup cornmeal
1/2 cup bread crumbs (I used Italian seasoned ones)
salt and pepper
oil for frying

DIRECTIONS:
Slice tomatoes 1/2 inch thick.
Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
In a large skillet, on oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan, Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

1 cup milk
2 teaspoons soy sauce
1/4 teaspoon ground black pepper

Ranchero Macaroni Bake

1 can (26 ounces) Cream of Mushroom Soup
1 cup milk
1 cup Picante Sauce
3 cups shredded Cheddar cheese or Monterey Jack cheese (about 12 ounces)
3 cups elbow pasta, cooked and drained (about 6 cups)
1 cup coarsely crushed tortilla chips
Stir the soup, milk, picante sauce, cheese and pasta in a 3-quart shallow baking dish.

Bake at 400°F. for 20 minutes or until the pasta mixture is hot and bubbling. Stir the pasta mixture. Sprinkle with the tortilla chips.

Kale, Roughly chopped, tossed with olive oil and garlic salt, and roasted until crisp at 425° F. Set aside.

Salad:
Lettuce of your choice
Olives, sliced
Grape Tomatoes, sliced
Cauliflower, finely chopped
Craisins of your choice

Assemble, drizzle with salad dressing of your choice. Top with crunchy kale. Enjoy!

Really Good Relish

REALLY Good Relish 8 cups of chopped/peeled cucumbers 4 cups of chopped/seeded green bell peppers 4 cups of chopped/seeded red bell peppers 2 cups of chopped celery 1 cup of chopped sweet onion 1/2 cup of pickling or canning salt 3 cups of white vinegar 2 1/4 cups of sugar 3 tbsp celery seed 3 tbsp mustard seed You can use a food processor to finely chop everything up. *In a large glass or stainless steel bowl.. combine cucumbers, peppers, celery, onion and salt...cover and let sit for 4 hours in a cool place..Then transfer to a colander and drain...rinse well with cool water and drain thoroughly...using your hands squeeze out the excess liquid. *Prepare your canner, jars and lids *In a large stainless steel saucepan...combine vinegar, sugar, celery and mustard seeds...stir well and bring to a boil over medium heat... add drained cucumber mixture and return to a boil,,,, be sure to stir frequently. ..reduce heat and boil gently for 10 min. *Put your relish in hot jars ...leaving 1/2 inch headspace..wipe rim well...place your lids on jars..place in canner.. be sure they are covered completely with water...boil for 10 min.... remove canner lid....wait 5 min. ....remove jars...cool and store.. * Be sure to make sure the center has popped down and sealed if not you can refrigerate and eat within 2 wks

Cheesy cream of chicken Soup

1/2 cup green pepper, chopped 1/2 cup onion, chopped 2 tablespoons butter or 2 tablespoons margarine 1 (10 ounce) can cream of chicken soup 1 1/2 cups milk 1 lb Velveeta cheese, cubed 1 (10 ounce) package frozen chopped broccoli

Directions:

1 Sauté onion and green pepper in butter. 2 Combine all ingredients on low in crockpot for 3-4 hours. Do not add salt.

Don't get me wrong. It isn't a "Miracle Pill." Some people do have to make small changes to see the HUGE pay-off a lot of the customers are getting. Here are my suggestions - using Skinny Fiber or not.



You MUST drink water...lots and lots of water. You should try your best not to drink anything except water (but I'm sure a little pop, tea, beer, coffee creamer or whatever your guilty little pleasure may be won't make or break your progress.)
You MUST take your Skinny Fiber at least twice a day, half an hour before your two largest meals. If you find you are still hungry, you can adjust several different things. When I first started, I was taking 2 pills before breakfast, lunch, and dinner. I was still snacking between meals also, but tried to stick to fruits, veggies or sometimes a 100-calorie pack. Some people take their pills before breakfast and lunch and feel they don't need a dinner dose. That is perfectly fine. Some people take 1 pill with breakfast, 1 with lunch and 2 with dinner. It all depends on your eating habits, your daily schedule and your hunger. You don't even have to take them at the same time every day if you aren't hungry at the same time every day - however, personally I have found that if i gently ease into an eating schedule I can then "adjust" my hunger in that way. Eating BEFORE you are hungry is definitely the way to go. Letting yourself get TOO hungry will most likely set you up for a binge.
DO NOT TRY TO STARVE YOURSELF! This is the most important rule in ANY weight loss regimen. You should try to make sure that you stay at 12-1500 calories per day. Tracking your food is a great way to check this. If you're new to this then start by just decreasing your portions. Eat 3/4 of whatever amount you would normally eat. If you can, try to fit in some exercise.
AVOID JUNK! I am a woman. I know that sometimes you just NEED chocolate. I have been known to eat 2-3 candy bars in a day. I am a binge eater and have been since I was young. I'm not saying to totally cut all of it out. But remember that YOU ARE IN CONTROL, NOT THE CRAVING!
