Chicken & Potato Surprise
A one pan meal that is full of cheese, chicken and potato goodness.
Ingredients
16 oz extra lean, skinless, bonless chicken breast
2 tsp salt
2 tsp pepper
2 tsp garlic powder
5 russet potatoes
1 cup heavy cream
1 tsp salt
1 tsp pepper
1 cup reduced fat cheddar cheese
2 tbsp dried parsley
Instructions
1.Preheat oven to 400
2.Prepare a large casserole dish with nonstick spray
3.Season chicken with salt, pepper and garlic powder
4.In a skillet over medium heat brown each chicken breasts on both sides, cooking for only 2-3 minutes, the set aside
5.Peel and cut each potato into matchstick size sticks
6.Layer 3/4 of the potatoes on the bottom of the casserole dish
7.Lay chicken on top of the potatoes and then place remaining potatoes on top of chicken
8.Pour cream over chicken and potatoes
9.Season with remaining salt & pepper
10.Sprinkle cheese over cream and then top with parsley
11.Cover pan with foil, making a few slits in the top of the foil, and bake for 45 minutes on the middle rack of the oven
12.After 45 minutes move rack to lower rack and continue baking, with the foil cover, for another 30 minutes then check the potatoes for tenderness
13.If potatoes are done, remove the foil, and let continue cooking until lightly browned
14.If potatoes are not done keep cooking for an additional 10 minutes and check again

1 chicken breast and 1 cup of potatoes is 9 WW+ points
